Shark Week Recipe: Cupcakes

So Shark Week started last night, and I couldn’t be happier.  I’m watching a special shark themed Mythbusters right now.  It’s the start of an awesome week, and many of my friends are of the same mindset.  One in particular, other than my friend Heather with the shark tattoos, is my friend Sierra.  She is a marine biology major at school and also loves sharks. Hell, she’s planning on devoting her life to them and other marine life.

Sierra sent me an email this morning for her recipe for shark cupcakes, and I thought what better way to start off my week of shark themed recipes than to use a submission? Shark Week should be shared. Enjoy the recipe!

note: While all ingredients should cost under $20, I have yet to check the prices myself as I have not made this recipe myself.

Vanilla Cupcakes:

2/3 cup butter, softened

¾ cup superfine sugar

1½ tsp vanilla extract

2 large eggs, lightly beaten

1½ cups flour

Butter cream frosting:

3¾ cups confectioners sugar

½ cup butter or margarine, softened

3 -4 Tbs vanilla

1 tsp vanilla

Method:

beat butter and sugar together until light and fluffy, then beat in the vanilla extract. Gradually beat the eggs, sift in the flour and fold into the mixture.

spoon the batter into muffin pan. Bake in preheated oven, 375˚F, for 12 – 15 minutes or until golden. Makes 18.

In a large bowl with mixer at low speed, combine sugar, milk, butter and vanilla. Beat at medium speed 1 – 2 minutes until creamy. Add 15 drops of blue food coloring.  Makes enough for 24 cupcakes.

Finally, add the gummy shark toppers.
