Winter is the time of easy simple comfort food, and roast beef is top of that list. I love to just throw a meal in the oven and forget it while I hang with The Russian and our roommates. Then, when you’ve almost forgotten (or in my case, completely forgotten, notice how the meat is just a tad over), the smell wafts over to you and woop! You have a meal.
Ingredients
1 beef roast, about 3 lbs. [anywhere from $10 or so]
1 medium onion [$2]
1 box mushrooms [$2]
Beef broth [$3]
1 bottle red wine ( both to cook and drink) [$7]
Wondra gravy flour [$3]
Directions
Preheat oven to 350. Sear the roast in a pan with olive oil then place in a baking dish with a rough chopped onion, the mushrooms, and some broth to keep the meat juicy. Place in the oven for about 40 minutes for rare.
In the meantime, I roasted some potatoes in rosemary and olive oil in the oven and made some gravy. Take about a cup of wine and a cup of broth and a few tablespoons of flour to thicken. I also added some rosemary and thyme springs, let the gravy simmer, and then strained out the solids.
When the roast is done,let rest and serve with the onions, mushrooms, and gravy. Serve with the potatoes and a salad if desired.
