The Russian is away on a business trip this week, so I’m cooking for one (and being a bit lazy). I love roasted chicken but wasn’t invested in taking the time to roast one, so I decided to pick up a rotisserie chicken from my local Shaw’s. Only three bucks for a quarter of dark meat ( my favorite type of meat).

All I did was pair the chicken with some leftover fries from the lamb burgers I made last week and some salad simply dressed with olive oil and Goya Salad and Vegetable seasoning (I’m addicted to this stuff) and presto! Dinner for one.
Obviously you can make this your own with whatever is on hand: rice pilaf and some frozen veggies are also good parings, or roasted potatoes and a simple tomato salad. The sky is the limit here! The point is, those rotisserie chickens at the grocery store are a wonderful way to have a delicious and healthy dinner for under five bucks.
